Time and again I am reminded of how capable children really are. Capable of articulating needs, capable of using tools like knives and peelers, and capable of enjoying strong flavors. This week in FoodPrints at Peabody we prepared a salad jam-packed with veggies and dressed with homemade herb vinaigrette. Flavors of garlic, radish and scallion punctuated our meal. Once again I was relieved to find even the most hesitant of children at least trying the salad. One child raised a finger into the air, and exclaimed, "Miss Christy, what are these green circles? They are delicious!" I moved closer to examine a tiny sliver of scallion resting on the tip of her finger. "Ah, those are scallions," I responded. "Wow!" she said.
