Soup & Gnocchi for a Rainy Spring Day

Winter is finally over. The days are getting longer and warmer, and the gardens are beginning to show signs of life. But before we can get to our May flowers, we have to endure many April showers. What could be better on a cool, rainy day than a steaming bowl of tomato soup? Warm up with these new recipes from FoodPrints teacher at SWS, Margi Fineran. For a delicious twist on classic tomato soup, add cannellini bean gnocchi, and shower it all with freshly grated parmesan and chopped basil. I bet you feel better already. (Gnocchi are an Italian dumpling traditionally made with potatoes. Try the white bean version!)
